Soft pretzel bites.

I came across this recipe for soft pretzel bites at www.melskitchencafe.com and thought it’d be perfect to make for a Super Bowl party. I doubled the recipe & it was a good thing because they were all gone even before halftime! The recipe here has all the steps with some great pics, so all my process pictures aren’t necessary, but oh well! Other than doubling it and using slightly less butter, I didn’t really change the recipe since I’ve never made anything like these before. I only wish I had some coarse salt to use. {Bummer.} Eh, oh well, they still tasted great! So below is the recipe straight from melskitchencafe.com with my process pics. Keep in mind, when I made them, I doubled all the ingredients listed the recipe below.

Chewy Pretzel Bites

*Note: if using active dry yeast, increase the yeast to 1 tablespoon. Proof the yeast in the warm water and sugar (let it bubble and foam – maybe about 5 minutes) before adding it to the flour and salt.

*Makes about 2 dozen pretzel bites

Dough:
2 1/2 cups (10 1/2 ounces) all-purpose flour
1/2 teaspoon salt
1 teaspoon sugar
2 1/4 teaspoons instant yeast
1 cup (8 ounces) very warm water

Topping:
1/2 cup (4 ounces) warm water
2 tablespoons baking soda
Coarse salt (optional)
3 tablespoons butter, melted

IMG_8693

In a large bowl or the bowl of an electric mixer, place the flour, salt, sugar and yeast. Mix to just combine.

IMG_8694

IMG_8696

IMG_8699

Add the water and mix well, adding more flour, as needed, a bit at a time to form a soft, smooth dough that clears the sides and bottom of the bowl.

IMG_8701

IMG_8702

Knead the dough, by hand or machine, for about 5 minutes, until it is soft, smooth and quite slack. The goal is to get a really soft dough that isn’t overly sticky.

IMG_8708
{my mom took this pic cause I was visiting her place :)}

Lightly flour the dough and place it in a plastic bag; close the bag, leaving room for the dough to expand, and let it rest for 30 minutes or up to 60 minutes.

IMG_8712

Preheat your oven to 500°F. Don’t be afraid of the high heat! This is what will help those pretzels to brown up perfectly and stay soft on the inside. Prepare two baking sheets by lining them with parchment paper or lightly greasing them.

Transfer the dough to a lightly greased work surface, and divide it into about four strips of equal length.

IMG_8724
{I have 8 strips because I doubled it.}

Allow the pieces to rest, uncovered, for 5 minutes. While the dough is resting, combine the 1/2 cup warm water and the baking soda in a liquid measuring cup (deep enough to dip the pretzel bites into). Make sure the baking soda is thoroughly dissolved. Sometimes I have a hard time getting the baking soda completely dissolved, so I just lightly stir up the mixture right before adding each pretzel.

IMG_8726

Cut each strip of dough into about 6-8 pieces, about 1 to 1 ½ inches in width. You don’t have to be completely exact, just eyeball it. Dip each pretzel bite in the baking soda solution (this will give the pretzels a nice, golden-brown color), and place them on the baking sheets. Sprinkle them lightly with coarse, kosher, or pretzel salt. Allow them to rest, uncovered, for 10 minutes.

IMG_8727

IMG_8729

Bake the pretzels for 7-8 minutes or until they’re golden brown. Bake one sheet at a time – it won’t hurt the other pretzels to chill out for a little longer.

IMG_8730

Remove the pretzels from the oven, and brush them thoroughly with the melted butter. Keep brushing the butter on until you’ve used it all up; it may seem like a lot, but that’s what gives these pretzels their ethereal taste.

IMG_8732

Eat the pretzels warm, or reheat them in an oven or microwave on low heat.

IMG_8735
{or if you’re like me, you’ll eat one the instant you finish buttering them!}

These were really good dipped in some yellow mustard. Mmm. Eugene’s already put in a request for another batch of these asap. :)

A muddy mess.

In our negotiation process to purchase our bank-owned home, we were pleasantly surprised to find out that the bank had agreed to pay for a new septic system to be installed at the house. Back when we started the house buying process, the backyard looked like this…

IMG_4074

Then it snowed & the bank sent over a septic company to replace our system and it looked like this…

IMG_7007

And since it snowed so much this winter, we haven’t even seen the yard since they dug it up for the septic – that is, until this week. And now it’s a muddy mess with all the melted snow and looks like this…

IMG_9220

Yikes. Yikes. Yikes.

Thankfully, the company’s coming back over later to level & seed this area. The weather’s finally nice enough to do some yard work this week, so I took the pup with me as I picked up the bazillion branches that fell in our yard from the ice storm. Well, big surprise, the pup loved the mud. He found one particular puddle that still had chunks of ice in it. He the proceeded to bob for the ice chunks. Lovely.

IMG_9236

IMG_9224

IMG_9228

See the ice chunk above? Goofball.

IMG_9231

Then the horrific happened. And this all played out in slow motion for me as I saw the whole ordeal coming. Our super nice neighbor walked outside still dressed in her nice dressy work clothes. The pup, the lover of people that he is, instantly ran towards her as I screamed and ran {remember, all in slow mo} to try to intercept the mud-covered dog before he ruined our neighbor’s outfit. No luck, but she was great about it and honestly didn’t even seem to care as she kneeled down to greet Espn even more. Luckily she has two dogs & was completely cool with the terrible situation. {Whew!}

IMG_9223

So after I made a massive pile of sticks and branches, it was bath time for the pup.

IMG_9241

Ew.

IMG_9245

After lots of scrubbing, the finally clean pup hung out a while at home while I got my hair colored by my SIL Rita. It was nice catching up with her again…and getting my hair back to looking presentable! :)

Kitchen plans.

I mentioned a while back that I’ve been creating “mood boards” for ideas that I’ve been mashing around in my head for each room in our house. I haven’t really shared many/any of our decorating plans, except for a teaser or two. I guess today’s your lucky day {if ya get a kick out of the home decor stuff!}

I’ll remind you of the state our kitchen was in when we stepped in the door…

And here’s what it looks like now…

 IMG_8552

 IMG_8545

And here is my ever-evolving mood board for the kitchen area…

And you’re probably needing a bit more of an explanation, hmm.

  • At first, I planned a light yellow paint, but we’ve since decided on River Reed {light green shade} for the walls.
  • Our current countertops are HIDEOUS. They have {I kid you not} boomerangs stenciled all over them. Eugene swears are straight out of the bowling ally. Therefore, we want to do a dark black/slate colored countertop – fingers crossed for granite if our budget doesn’t get busted with many more unexpected expenses {i.e. water softener/iron filter coming to over $3k – yuck.}

IMG_9133

  • We bought a new faucet and plan to buy an under mount sink also.
  • We plan to paint the cabinets white, and as you know, we went with an open shelving concept for one set of cabinets to show off our wedding Fiesta Ware.
  • The gorg. green glass mosaic tile that I teased you with earlier will be our backsplash

IMG_8468

  • We’ll probably go with a stainless drawer pull and cabinet handles, like these from Menards maybe.

IMG_8175

  • I also have big plans for a chalkboard wall that I’m super pumped about. I think it will be awesome to be able to write to-do lists, Bible scriptures, menus, and little notes right on our kitchen wall.

image source
  • We’re toying with the idea of adding a small butcher-block island. It’s a toss up right now.
  • Oh, and I bought these super cute cereal canisters for Walmart {$6-ish!} that make the boomerang countertop ever so slightly less hideous, despite the disgusting stained paint behind them.

IMG_8739

  • The floor’s proving to be the biggest mental road block for me. I have no clue what we’re going to do for it.

And the Dining Area is basically the same since it’s in the same room…

image

I want to make some type of chandelier for over the island and/or the dining table and some shelves or frames.

So there you have it! Just a few ideas I have brewing for our house. :)

River reed, winter wheat and red velvet.

Lots went down yesterday. It was a fairly normal work day, but after Eugene’s school ended {he’s a teacher}, he went to start his car and, well, it didn’t work. So I went to pick him up & we’re praying it’s something minor that needs fixed. We didn’t let the car snafu keep us from capitalizing on a sale on Olympic Premium Paint {zero VOC} that ended yesterday.  We rushed over there & bought $400 worth of green, yellow, white, wall paint, primer, ceiling paint, chalkboard paint, and three rolls of chain link fence. We still walked out the door with some good savings because of the paint sale, a 10% off coupon we got in our packet of info from the post office to change our address, plus a price match on the fence.
image     IMG_9219
We picked out the colors “Winter Wheat” {middle color on the sample one the left side of the pics above} for the living room & hallway. We went with “River Reed” {top right circle color in pic above} for the kitchen.
I also hit up Target & walked away with this 5x7 chenille rug marked on clearance from $129.99 to $69.00!
image  IMG_9217
The couch we have is a weird greenish brownish color, and when I saw the rug I thought it’d match really well. It’s hard to tell with the terribly dark red paint, ugly curtains, crushed milk jug that the pup plays with, & messy coffee table, but I think the rug will look nice there eventually. And the pup, who hates our slippery hardwood floors, was pleased as punch to have a rug.
IMG_9210
I also scooped up this green floral shower curtain. Verdict’s still out on this choice, but it was marked down from 20 bucks to just 10, and it has one key feature – contains both tan & white colors – which is a huge plus because I have a tan countertop in the main bathroom and we’re going to paint the wall tiles white. Also, I’m thinking it’ll tie in the colors from the kitchen {green} and the living room {yellow, green, & white.} We’ll see if it sticks around for the long haul.

IMG_9213 IMG_9214
We got home from our shopping excursion just in time to scarf down some dinner & run out the door to our small group get together for church. We spent time at the church I love, with couples I love, playing the sport I love {volleyball}, eating food I love {dessert!}, and got new books to continue the small group discussions I love. :) It was a lovely Valentine’s day.
 IMG_9202
We had a red velvet layered ice cream cake from Cold Stone Creamery. A.mazing.
IMG_9192
I even got to see little man, Griff, dressed for the occasion.
IMG_9188
Oh what a long day. But it sure was a nice one! <3
