BBQ Chicken Pizza.

A while back, I made some BBQ Chicken Pizzas for a Friday night with Friends. Well, I’m finally passing on the {so-easy-it’s-almost-dumb} recipe.

We had all the ingredients on hand {except the red onion, but that was a quick pick-up and not a vital ingredient,} plus it’s a pretty inexpensive meal.

BBQ Chicken Pizza

Grilled BBQ chicken breasts
Large flour tortillas
Cheddar & Mozzarella cheese (shredded)
Red onion
BBQ sauce

First, set your oven to preheat to 350 degrees. Next, if you want, slice the tortillas in half. Then spread BBQ sauce all over.

IMG_2639

Next, chop your grilled chicken into small cubes.

IMG_2641

Layer the chicken onto your tortillas.

IMG_2643

Add the cheese & sliced red onion. {I made half with onion and half without to please the picky eaters…aka Eugene.}

IMG_2644

Bake for fifteen minutes, or until the cheese is nice & melty. {Yes, I know that’s not a word.}

Let it cool a bit before devouring. So easy & so tasty!

Lunch with my husband.

I decided to spend yesterday away from the office. Burn out is huge in the event planning/event coordinating industry, and I completely understand why.

So I went on a run with the pup, cleaned the shower {fun stuff}, and then headed to meet my husband for lunch. I decided I’d be a nice wifey and surprise him with some of this…

We pinch pennies around our household {by choice}, so even MickyDee’s is a splurge. He loves fast food, so he was thrilled with the McDouble. :) We ate our delicious heart-attacks on a bun in his classroom & enjoyed the 40 minutes of atypical time together…making it both our wondrous things for the day.

Later that evening, we went to watch his little sister play JV Soccer. We sat through two lightening delays and 15 minutes of downpour, but it was worth it to cheer her on. We’re super proud of her…captain for her JV team & dressing Varsity!

Plus, we got some very encouraging news from the AD there about a potential opportunity for Eugene. {It’s amazing how God works.} Pretty sweet to have two wondrous things in one day!

You have filled my heart with greater joy.

Yesterday morning, I read {randomly} Psalm 4, and on my way to work I passed a freshly plowed field & thought it was a perfect backdrop for verses 7 & 8. {Click on the image to see it larger.}

We had a nice family dinner yesterday evening to celebrate Dad’s birthday last night. Plus, my sister & brother-in-law booked a flight to come home for Thanksgiving! YEAH! This means I get to see my little niece in a few months. :) And double plus, I booked a flight to go visit Tulsa in November too! YEAH YEAH! {Southwest Airlines is running a great sale. Score!} I cannot wait to hug my sister and hold baby Cate.

Just another reason He has filled my heart with greater joy.

More Fall family session pictures.

Time for the second {and final} round of Sunday’s family photo session. Looking at these cute little girls makes me miss my niece so much! I definitely need to book a flight to see her pretty face soon.

Oh, and thanks for the positive feedback – I’m trilled that so many people are sharing that they like the pictures!

I also want to wish my Dad a very happy birthday today {even though I doubt he reads my blog.} Dad, I hope your birthday is filled with countless wondrous things! You’re a tough man who finds such a balance of true kindness and generosity. I’m so thankful for your love & wisdom. Happy birthday, Dad.

One perk of my job & a Fall photo session.

Every now and then, I get to experience one of my favorite perks of my job as an event coordinator…flowers! Sometimes the bride decides to give away or throw away her fresh floral centerpieces. This Saturday, I scored enough fresh flowers {in Fall colors} to decorate my living room with three bouquets. All three are in glasses from Ikea that I love to use as vases.

Corner kitchen cart that’s in our living room:

The {free} flowers make me smile every time I sit on the sofa!

It was an insanely busy weekend with two weddings to work on Saturday. But everything went off without a single glitch {success!}

A quick weekend recap – open houses on Friday & Witt vball vs. Calvin with my old teammates, cleaning & baking cookies & working all Saturday night, “teaching” the two-year-olds in Sunday school & church & errands & picture session on Sunday. Whew!

My college coach asked me to take some pictures of his family on Sunday, so we met up at a local orchard to try our luck with a photo session. Their almost-two-year-old was less than interested in the camera or me, but I think we got at least a few good shots. :)

I’m still editing most of them, but here’s a few to start with…

Meet Olivia.

IMG_3029c

She loves peanut-butter-filled pretzels & apples. ;)

 IMG_2908b

Meet Olivia’s little sister, Isabel.

IMG_3058b

She was so well-behaved…even slept {for a minute} in between pumpkins.

IMG_2922c

And this is their momma, Jill.

IMG_2937b

Too cute!

 IMG_2939c

She was a bit sleepy outside in the fresh air.

IMG_2955b

Olivia found a pumpkin perfectly her size.

IMG_2964c

And this is my coach, Paco.

IMG_2999b

He has a house-full of girls & can definitely make them laugh.

IMG_3017b

We walked across the street to a sunflower field – a great backdrop for some pics.

What do ya think? Remember, I have zero photography experience or knowledge, so be kind to me. :)

More to come!

A rainbow out my door.

It poured hard yesterday while I was working. I mean hard. I’m talking water running in under the doors, hard. It got so foggy and misty at one point, that it was a bright yellow color everywhere. Wondering if I should be concerned, I walked out of my office to look through the door. And here’s what I saw…

IMG_2725

I’ve never seen such a low rainbow in my life. It was bright & so low that one of my coworkers assured me it wasn’t real. {She thought it was just a reflection off the glass.} But as I stepped outside of the door, with the now-small drops of rain slowly hitting me, I realized it was completely real.

Isn’t that so perfectly God? Downpour comes & just when we think it might be time to worry, He puts a rainbow just a few feet in front of us. So close to us that we don’t even thing it’s there. And then minutes later it’s erased by the sunshine.

Makes me wonder, what other rainbows has God placed right in front of my nose that I’ve mistakenly overlooked, thinking it they weren’t real? I pray today that I notice each rainbow God blesses me with, even the ones that seem too close to be true. {God is so cool.}

On a completely different note, I got to cheer on my best friend as she coached my old high school volleyball team.

IMG_2734

I’m so proud of her. Coaching can be such a challenge, especially when you’re working with teenaged girls. Libby’s a great role model for them {whether they realize it now or not!}

IMG_2729

Busy today setting up for two weddings for work today…

Tomorrow will definitely be a busy day, but that’s okay. I’m thankful for a job!

Chicken nacho bake.

We tried a new recipe last night – chicken nacho bake. {Why do I always spell it natcho?} It turned out pretty good, and we agreed that’s it can go in the “make again” pile.

I found the recipe on Kraft’s website and I simplified it to just four ingredients & didn’t make the rice dish. {I’m pretty low on energy this week!}

Chicken Nacho Bake for two

2 chicken breasts
1/2 cup of salsa
Tortilla chips
Shredded cheddar cheese

IMG_2717

First, preheated the oven to 400 degrees. Next, I made a foil packet & placed my chicken in the center. Then I poured the salsa on the chicken & baked it for 20-25 minutes.

 IMG_2714

Sorry, I think the pictures look pretty unappealing. Chicken sometimes has that effect on me.

Once it’s baked through, {I sliced mine open to check that there’s no more pink in the chicken}, then you bring it out of the oven, open the packet & add some crumbled tortilla chips on top of the chicken.

IMG_2716

After the chips, you add your cheese.

IMG_2718

Bake five more minutes, or until the cheese is melted. Top it with sour cream & serve it up! We had it with some white rice.

IMG_2722

We both agreed that our favorite part was the chips, so I’m trying to think of a way to have the whole thing coated in chips, but still include the salsa. Hmm. Oh, and we’re using our leftover chicken to make chicken burritos tonight. {Gotta love multi purpose meals!}

I had a meeting for work last night, so we didn’t end up eating until 8 or so. I’m ready for things to settle down some – not sure when that will be though.
