Crazy Friday.

I’ve spent the day running around like crazy, setting up for a wedding reception that’s here tomorrow, meeting with three different couples, running work errands, you get the point. With that said, um, you’ll just have to hold your horses for the enchilada recipe!

The houses we saw last night were disappointing. One vent on that topic: seriously people, if you smoke, don’t do it in your house! You’re killing your chances of selling your home. Spend money on cigarettes AND lose money on home value…not to mention harming your health {for crying out loud, seriously!} I think I’ve looked at every house around here within our budget and nothing gives. Oh well, patience patience.

I am looking forward to my time tonight with Julie as I get my hair cut. I could use the Godly encouragement she always brings. :)

PS sorry for the slacker of a post today!

The sun is out to play today.

Not a second too soon, the sun decided to poke through the dreary clouds last night, right when I was taking the pup outside. It instantly made me have that deep sigh moment where a slow and thankful smile came across my face. Ah, it has stopped raining {even if it’s only temporary}! I had just a few minutes of time to snap some shots of the sun before it hid again behind the hill. Definitely my wondrous thing for the day.

And, praise the Lord, the sun has been shinning all day today. He knew I needed it desperately!

I also got in the mood for some new pup pics. So enjoy seeing the ever-growing lab/newfie mix we call Espn. I’ve also taken the liberty to add captions of what I think this ornery pup is thinking.

“Will you please let me chew on your shirt sleeve?”

SDC14349
“You’ve got to be kidding. I’m not coming over to you, no matter how much you whistle and call me.”

SDC14346
“I know you’re hiding cereal in your hand. Pretty please?”

SDC14350
“Enough with the camera in my face already.”

Oh, I also whipped up some ground turkey enchiladas during my lunch break today for our dinner. I’ll post the recipe tomorrow if it turns out okay!

Fresh peonies.

I have a beautiful fresh picked bouquet of peonies on my desk.  {In a lovely Ikea drinking glass!}

SDC14338

Oh they smell so lovely!

SDC14339

It’s still raining {outside my window and in life too!}. This whole week is forecasted for rain. But maybe next week will be sunny and bright. :)

Last night, Eugene & I went to Applebee’s – he met his friend from Cedarville, and I met with the young Witt volleyball team. It was nice to reminisce…oh how I miss those volleyball days! I also had to laugh at how quickly they devoured their appetizers. We’re talking ravaging for the last crumb, eating the leftover spinach dip with a spoon because the chips were gone, getting giddy about a leftover “free-for-all” stack of fries! You workout hard, you eat hard. That should be part of the Witt volleyball motto! Tiger pride in every way!

Oh, and here’s my verse of the week, in case you’re interested:

"For the glory of your name, O Lord, preserve my life. Because of your faithfulness, bring me out of this distress." Psalm 143:11

Hot cross buns.

After reading about these pretty treats over Easter, I decided to try them for myself. I’ve never had hot cross buns, but my grandma said she used to buy them every Easter and loves them.

SDC14333

I followed the Pioneer Woman’s recipe {found here and copied below} and she definitely does a better job with the pictures than I do, so check out her blog if you’re making these. Here’s some pictures I took during my attempt. {PS note to self: don’t multi-task while trying to make these! My visiting with Grandma & mom, doing dishes, frying eggs, and looking at blogs online didn’t serve me too well! lol!}

This is my milk, oil, and sugar on the stove.

Mixing it.

Working on the layers of cinnamon, sugar, raisins. Fold together, do it again. Rinse and repeat {just kidding.}

SDC14324

Form your rolls and pinch the bottoms so that they’re all covered nice and pretty by the dough.

SDC14329

Brush on the egg white mixture.

SDC14331

Make up the icing, put in a zip lock bag to create the “cross” on the buns. {I did a variant of the icing, but I’m sure the Pioneer Woman's is the best...oh, I love reading her blog btw: http://thepioneerwoman.com/confessions/}

SDC14332

She warns that you have to let them cool completely before icing. Pretty buns! They were quite tasty…I think I’ll keep the recipe for another time. :)

Yesterday evening, I met with a bride-to-be and her mother. I’m their church coordinator. After that, Eugene and I went to Young’s for some cookie dough and cookies and cream ice cream and hitting golf balls on the range with our small group. It was fun, but the stomach ache we both have from the uncertainty looming definitely is a cloud over everything. Annoying thing! Oh well, we’ll see where we’re taken next!

Hot Cross Buns

Prep Time: 2 Hours
Cook Time: 20 Minutes
Difficulty: Intermediate
Servings: 18

Ingredients
  • Buns
  • 2 cups Whole Milk
  • ½ cups Canola Oil
  • ½ cups Sugar
  • 1 package (2 1/4 Teaspoons) Active Dry Yeast
  • 4 cups All-purpose Flour
  • ½ cups (additional) Flour
  • ½ teaspoons (heaping) Baking Powder
  • ½ teaspoons (scant) Baking Soda
  • 2 teaspoons Salt
  • ¼ cups Sugar
  • 1 teaspoon Cinnamon
  • Spices: Cardamom, Nutmeg, Allspice (optional)
  • ½ cups Raisins
  • GLAZE
  • 1 whole Egg White
  • Splash Of Milk
  • Icing
  • 1 whole Egg White
  • Powdered Sugar
  • Splash Of Milk
Preparation Instructions

BUNS

Combine 2 cups milk, canola oil, and 1/2 cup sugar in a saucepan. Stir and heat until very warm but not boiling. Turn off the heat and allow to cool until mixture is still warm, but not hot–about 30 minutes.

Sprinkle yeast over mixture. Add 4 cups of flour and stir to combine. Mixture will be very sticky. Cover with a towel and set aside for 1 hour.

Add 1/2 cup flour, baking powder, baking soda, and salt. Stir till combined.

Combine 1/4 cup sugar with cinnamon and whatever other spices you want to use.

Lightly flour surface. Press to slightly flatten dough. Sprinkle a couple tablespoons of the sugar/cinnamon mixture. Sprinkle on about a third of the raisins. Then fold the dough over on itself and flatten again so the dough is “plain” again. Repeat the sugar/raisin process, then fold the dough again. Repeat a third time until all the raisins are used. (You won’t use all the sugar/cinnamon mixture.)

Pinch off ping pong or golf ball-size bunches of dough. With floured hands, quickly roll it into a ball, then turn the edges under themselves slightly. Place on a lightly greased cookie sheet. Cover and allow to rise in a warm place for at least 30 minutes…an hour-plus is better.

PREHEAT OVEN TO 400 degrees

GLAZE

Mix 1 egg white with a splash of milk. Brush onto each roll.

Bake for 20 minutes, give or take, or until tops of buns have turned nice and golden brown.

Remove from pan and allow to cool on a cooling rack.

ICING

Mix 1 egg white with enough powdered sugar for icing to be very thick. Splash in milk as needed for consistency.

Add icing to a small Ziploc bag and snip the corner. Make icing crosses on each roll, making sure they’re completely cooled first.

Please let it stop raining.

I feel like every post is of struggles and a new challenge to face. I promise, I don’t mean to focus on these things. It’s just the recent {or last year} times of our lives twisting and turning. We thought there might be a middle school position open in the same school district that Eugene teaches in now, but it’s not within his licensure.

Plus, I took Espn on a wet, nasty, rainy walk and got yelled at by an old lady who told me I couldn’t walk my dog on the road because it’s private property. I seriously broke into tears. I know it’s not a big deal. It just put me over the edge. Seriously, what next?!  I’m not sure now where we can take the dog for a walk. I can’t handle today.  I literally cried walking back, muddy from Espn jumping on me, rain dripping down my forehead, looking up and pleading with God to make the rain stop. Please, God, let it stop raining in our lives. I know we have it off great. I know we’re beyond blessed, with an overwhelmingly easy, privileged life. I just feel like this year has been back-to-back-to-back hoops and challenges. We will be okay. I know that. I believe God will pull us through. I’m just to the point of broken & weary. But it will be okay. It will be okay.

Alright, on a happy note – I had an absolutely wonderful weekend. Praise the Lord for that! Friday, since we had the bad news that week, I decided Eugene deserved some cheering up, so I spoiled him with a 24 pack of Mountain Dew, Papa Murphy’s pizza, and the Red’s game on TV. He was smiling. Something I’ve missed some lately.

Our friends, Jason & Megan, walked over to play cards. They brought their dog and the two pups wrestled the entire time. They had a blast {I think!} Megan and I lost every game…big surprise. This is all you could see of the dogs – blurs of hair and slobber!

Saturday, we slept in, went to some garage sales {$2.00 picture frame & $10 set of baseball cards}, then mom & grandma stopped over to visit. Grandma got to see our condo and meet the pup. And I made hot cross buns. {Recipe to come this week.} It wasn’t the prettiest process, but they tasted pretty good…next time I’ll do a better job!

SDC14333

The dog was smitten with Mom being there to pet him. He jumped right up on the couch to sit next to the pretty ladies. :) He’s so spoiled.

SDC14327

Then, Saturday evening we spent at my in-law’s house to celebrate Heidi’s 15th birthday. We’re so thankful for our family. By the end of the night, it was just Eugene’s parents, his two sisters, and his grandparents. We sat by the fire, melted my flip-flops {literally}, and laughed.

Sunday, we had one of Jordan’s baseball players over for breakfast and to church. Bacon {the real, full of fat kind – not the turkey bacon stuff that I prefer}, home fries, a massive omelet, and hot cross buns.

SDC14334 SDC14336SDC14337

The food was good and the message was great. I sang with my heart full of thankfulness, victorious over the tears of struggle, “How deep the Father’s love for us. How vast beyond all measure.”

It can’t rain forever. Maybe my rainbow is coming tomorrow. :)

Silence and Trust

So my devotional that I receive via email every morning was titled “Silence and Trust” this morning. Interesting. It reminded me of the story where Jesus waited two days to leave after finding out his friend, Lazarus, was seriously sick. Two days he waited. Yet, He didn’t wait forever. He followed through. He will follow through. The devotional said:

“His silence is the sign that He is bringing you into a marvelous understanding of Himself. . . . If God has given you a silence, praise Him, He is bringing you into the great run of His purposes.”

I had two wondrous things already today. A great and heartfelt call from my friend, Maria {a prayer warrior who I’m so thankful for} and lunch with Brittany {my assistant coach, friend, and inspirational/down-right-beautiful-inside-and-out woman.} Both are an encouragement to me in many ways, especially just knowing how beautiful and real and caring people can be.

This is my last real weekend off until September 11. I have July 4th weekend off right now, but I’m sure something will get booked. Wow, that’s a lot of Saturdays! At least I have a job – I’m so thankful for God providing for us through my job.

With that said, I’m going to enjoy every minute of this weekend. Tonight we’re going to buy a baby gift for one of Eugene’s students who’s pregnant {we’re not going to tell her it’s from us.} We’re going to enjoy Papa Murphy’s pizza and unwind together. We’ll see where the weekend takes us from there.

Going through this crazy year {as a newlywed} has thrown us around a lot, but oh how it’s made me so thankful for my best friend, my husband, my partner. There’s been some challenging tear-filled days, but I’m so glad to experience it all with Eugene. What an overwhelming blessing my husband is to me.

Not the way we planned.

Sad to say, we finally got an answer on the job front. And it’s a no. I’m so proud of Eugene and his dedication, his heart, his passion and kindness for his students and players. He deserves the job, and I am in no way disappointed in him – quite the opposite, I am filled with love and respect for who he is and how hard he has worked.

So, we’re being plowed in a different direction. Confusing and disheartening, but I know God is the ultimate provider. He will take care of us. He will place us on the path that’s in His perfect plan.

Baby Cate sent me some words of affirmation yesterday. I love her so much. And I love her mommy & daddy too.

Oh I miss them terribly.

It’s a hard day, but life is precious, and God is good. I’m leaning on that.
